Offal’s On Fire! Mexican Tacos De Lengua Make Global Top 10!

Howdy, You know Taste Atlas, right? They’re those foodie gurus who rank everything under the culinary sun. Well, they just dropped their list of “The 50 Best Offal Dishes in the World,” and guess what? Mexico – with its glorious tacos de lengua – made it into the top 10! Talk about a win for our taste buds!

Now, “offal” (or “menudencias,” as we call ’em down here) can be a bit polarizing. It’s basically the edible organs of an animal, not the usual muscle meat. Think heart, liver, kidneys, lungs, spleen, and even tongue. Some folks might wrinkle their noses, but if you’re like me, you know these parts, when cooked right, are pure gold! We see them in everything from barbacoa to menudo.

From Humble Beginnings to Gourmet Delights

For a long time, offal was considered a “second-class” food in some cultures. But let me tell you, that’s changing fast! These days, offal’s getting its rightful spot as a gourmet delight in kitchens all over the globe. Cultures like Mexican, French, Chinese, and Peruvian have created some truly iconic dishes around these ingredients. Think tacos de lengua, French foie gras, or Peruvian anticuchos. So, it’s no surprise to see these regions dominating the Taste Atlas rankings.

The Global Top 10: Where Mexico Shines!

Taste Atlas gathered opinions from foodies and chefs to put this list together, judging on flavor and preparation. While it’s a top 50, only ten dishes snagged the very top spots. And guess who’s on the list?

  • Kaleh Pacheh (Iran): A dish made with various parts of lamb’s head. (And get this, it’s often eaten for breakfast!)
  • Anticuchos de Corazón (Peru): Skewers of beef heart – seriously delicious!
  • Kokoreç (Turkey): Prepared with lamb or goat intestines wrapped in seasoned offal.
  • Gyutan (Japan): Specifically, grilled beef tongue.
  • Kokoretsi (Greece): Lamb intestines wrapped in seasoned offal.
  • Drob po Selski (Bulgaria): Pork or chicken liver, “country style.”
  • Mollejas (Argentina): Sweetbreads from the thymus gland of cattle.
  • Kebda Eskandarani (Egypt): Fried liver seasoned with onion, garlic, pepper, and more.
  • Seolleongtang (South Korea): That famous Korean soup made with ox bones.
  • And coming in strong for Mexico at number 10, the legendary Tacos de Lengua! These iconic street tacos, made with seasoned, diced beef tongue and served with onion, cilantro, and salsa, are a true taste of Mexico.

And get this, Mexico popped up again at number 36 with the equally traditional tacos de tripa! Latin America also made a strong showing with dishes like sopa de mondongo, chinchulines, and ají de lengua.

A Little Cautionary Tale (But Don’t Let It Stop You!)

Now, a quick heads-up from the pros: while offal is packed with nutrients, some bits like liver and kidneys are high in cholesterol, so enjoy ’em in moderation. Also, since these are organs that filter toxins, it’s super important to make sure they’re well-cooked to avoid any nasty bacteria. And if you have gout, be aware that offal, especially liver and brains, contains purines that can be an issue. Always try to get your offal from animals raised in hygienic conditions and fed naturally.

But honestly, don’t let that stop you from diving into the delicious world of offal! Especially those tacos de lengua! They’re a taste of Mexico that the whole world is now recognizing.

What’s your favorite offal dish, San Miguel? Have you tried any of the ones on this list?
